Delight Tomato & Basil Penne

With just a few simple ingredients, you can have a fast and delicious dinner on the table. This Tomato Basil Penne is a quick easy dinner that is packed with bold flavor!


10 oz Delight Nugget (sliced)

8 oz dry penne pasta

2 Tbsp vegetable oil

½ small white onion (diced)

5 cloves garlic (minced)

8 oz white mushroom (sliced)

17 oz tin tomatoes (cut half)

A bunch of fresh basil

Salt and pepper, to taste

Vegan parmesan (optional)

Extra-virgin olive oil, for drizzling


  • Preheat oven 400°F, place Delight Nugget into oven about 10-15 min or until both side golden brown. Sliced it and set aside.

  • Heat the oil in a large pan over high heat, put the onions and garlic, stir for 2 min. Add white mushroom until it edge get brown, and then add tomatoes with the juice. Reduce the heat to a simmer and cook until the tomatoes begin to soften.

  • In the same time, bring a large pot of water to a boil, add the penne and 2 tablespoons salt and cook until cooked through (follow the instruction on the package). Drain the pasta.

  • Add sauce to pasta. Top with extra basil. Drizzling with Extra-virgin olive oil and vegan parmesan.
