Delightful Vietnamese Spring Rolls

This Delightful Vietnamese Spring Rolls recipe (gỏi cuốn) is full of fresh herbs, veggies, and Delight Patties all brought together with a super flavorful sweat & sour sauce and peanut dipping sauce.


Spring Roll

10 oz Delight Patty, sliced

1 cup torn butter lettuce, ribs removed

2 medium carrots, sliced into strips

2 mini cucumber, thinly sliced

1 medium red pepper, sliced into strips

1 bunch fresh cilantro

1 bunch fresh basil

1 bunch fresh mint

4 ounces vermicelli or rice noodles

8 spring roll rice papers

1/2 tsp lime juice (option)

1/2 tsp sugar (option)

Homemade Peanut Sauce

1 Tbsp vegetable oil

3 cloves garlic, minced

5 Tbsp soy paste

2 Tbsp salted peanut butter

1/2 tsp sugar

1 tsp vinegar

100 ml water

Homemade Sweet and Sour Sauce

3 cloves garlic, minced

3 chili pepper, minced

5 Tbsp sugar

1 Tbsp salt

1 Tbsp lime juice

200 ml water

2 Tbsp corn starch + 3 Tbsp water

Spring Rolls Instructions

  1. Put rice noodles into boiling hot water for about 8 minutes (follow instructions on package), then drain and rinse them under cool water. Set aside.

  2. Heat a pan over medium heat, add some oil and then pan fry Delight patty until both side golden brown. Remove from pan and set aside.

  3. (Option) Add 1/2 tsp lime and 1/2 tsp sugar to carrot, mix well.

  4. Place one rice paper in the warm water and let it rest for about 15-20 seconds, and then transfer to a damp cutting board.

  5. Leaving about 1 inch of open rice paper around the edges, cover the lower third of the paper with veggies and herb mix. Gently fold over once, tuck in edges, and continue rolling until seam is sealed.

  6. Repeat until all fillings are used up.

Homemade Peanut Sauce Instructions

Use a small pot on medium heat, add oil and garlic, string until edge is golden brown. Then add soy paste, salted peanut butter, sugar, vinegar, and water. Whisk until smooth. Simmer on low for 1-2 minutes then remove from heat. The sauce will thicken as it cools.

Homemade Sweet and Sour Sauce

In a small pot, turn heat to simmer, add the garlic, red chili pepper, sugar, salt, lime juice and water; stir until sugar is dissolved. Mix the corn starch with water, add into pot and whisk it until smooth, then remove from heat.
