Delightful Vegan Japchae

Japchae (잡채) literally means “mixed vegetables. This is a traditional Korean dish usually served on special occasions such as weddings, birthdays (especially the first birthday) and holidays. Our vegan Japchae (Korean Stir Fried Glass Noodle) is definitely the most popular noodles dish to make, along with Jajangmyeon and vegie with Delicious Delight Patty!


Ingredients

1 package sweet potato noodles (250g)

10 oz. Delight Patty, sliced

1 small carrot, cut like matchsticks

1 medium onion, thinly sliced

1 red bell pepper, thinly sliced

3 green onion

3 garlic cloves, minced

6 white mushrooms, thinly sliced

Large handful of spinach

Sesame seeds (optional)


Sauce

5 Tbsp. soy sauce

2 Tbsp. sugar

1 Tbsp. sesame oil




Instructions

  • Boil a large pot of water and cook sweet potato noodles (following the instruction on the package). Once cooked, drain and rinse with cold water. Add sesame oil to noodles, and then cut the noodles into the length you like. Use same pot, add in the spinach and cook for 30 seconds. Rinse with cold water and squeeze the excess liquid out using a towel. Chop the bundled up spinach in half.

  • Prepare all the vegetables.

  • In the small bowl, put all the sauce ingredients together and stir until the sugar is dissolved.

  • In a large wok, over medium high heat fry the Delight Patty with a little bit of sesame oil until lightly browned on both side. Let it cool down, then slice it and set aside.

  • In the same wok, add ½ Tbsp. vegetable oil, and pan fry onions, garlic for 1 minute. Then add in the mushrooms and carrot and fry for another minute. Add in green onion and fry for one more minute. Slightly turn down the heat and add in the noodles, spinach, Delight Patty and sauce. Toss and cook until all the sauce is all soaked up.

  • Add some toasted sesame seeds on top, and enjoy!
