Delightful Vegan Quesadillas

Do you want some cheesy vegan quesadillas for Friday game night? Try this fresh, flavorful, and fun recipe! It couldn't be easier to make!


5 oz Delight Patty (Diced)

1 ¼ cups Vegan Cheese (Shredded)

8 Tortillas

½ Medium Onion (Chopped)

½ tsp Garlic (Minced)

1 Tbsp Olive Oil

¼ tsp Cayenne Pepper

½ tsp Ground Cumin

15 oz Black Beans Can (Drained)

15 oz Corn Can (Drained)

Black Pepper to taste

Sea Salt to Taste

For the Guacamole

2 medium Avocados

Half Fresh Lime (Squeezed)

Black Pepper to taste

Sea Salt to Taste


  • Add the onion and garlic to a frying pan with the olive oil. Add the cayenne pepper and cumin and sauté until the onions are softened. Add in the black beans and corn and sauté until warmed and well mixed with the spices. Add in sea salt and black pepper to taste. Set aside.

  • Mash the avocados, squeeze in the lime juice and add sea salt and black pepper to taste. Set side.

  • Brush the outside of the tortillas with oil, place the tortillas with the outsides down, then layer ½ cup of the cheese on half of each tortilla. Separate the filling among the 8 tortillas by placing them on the cheese. Fold the tortillas over to cover the filling.

  • Grill on a hot pan for 3-5 minutes, then flip and grill another 3-5 minutes until the cheese is melted.

  • Enjoy!
