Who don’t like the sweet corn chowder soup? With simple ingredients and Delight Vegan Ham , it brings you a warm heart!
¼ Delight Chicken Flavor Ham Roll (Diced)
1 tablespoon olive oil
1 medium onion (Diced)
3 garlic cloves (Minced)
2 celery ribs (Diced)
3 large carrots (Chopped)
1 teaspoon thyme
1 tsp smoked paprika
2 bay leaves
4 ½ cups vegetable broth
6 cups frozen corn
1lb potatoes (Cubed into 1/2 inches*)
1 can (14oz) coconut milk
salt + black pepper to taste
some fresh green onions (Chopped)
shredded vegan cheese (Optional)
In a large pan, heat oil over medium heat, add Delight Ham, pan fried until edges golden brown, and set aside. Add onion and celery in the pan, sauté for 7 minutes. Add the garlic, thyme after 5 minutes.
Add the corn, potatoes, bay leaves, and vegetable broth, bring to a boil, reduce heat, cover pan, and simmer for 15 minutes. Add the Delight Ham and coconut milk 5 minutes before soup is done. Remove from heat.
